The entire eight years I have known Josh he has NEVER even taken a bite of salad. Salad was "rabbit food." It has always been a BUMMER because I LOVE salad but they are too hard to make for just one person. Since Garrett has gotten older, he as started eating them so I started making them for the two of us. The other day a good friend made up dinner....she made chicken parmesian on a bed of spinach leaves....and Josh LOVED them. I convienced him that was what salad was so he gave it a try and LOVES it!!! Here is the salad Josh made for dinner tonight....that's all we had.....SALAD and grill TUNA!!!! I love eating healthy!!! Thank you Chris for the revelation!!
